Grandma Boucher’s Sloppy Joes

  • 2 pounds hamburger
  • 1 chopped onion
  • 1 tsp. season salt
  • 1 cup ketchup
  • 1/2 cup barbecue sauce
  • 2 Tb. lemon juice
  • 2 Tb. brown sugar
  • 1 tsp. liquid smoke

Brown hamburger and onion is skillet until meat is no longer pink and onions are soft. Mix remaining ingredients together and simmer for about 8 minutes. Serve on your favorite bun. Optional: add pickles and cheese on the bun too. Yum!

Roast Beef Philly Style Sub

  • 1 favorite cut of roast
  • 32 oz carton of beef broth
  • 1 tsp. minced garlic
  • 1/2 tsp. thyme
  • beef bouillon, to taste
  • pepper
  • 1 green pepper, sliced
  • 2 onions, sliced
  • 1-8 oz. carton of mushrooms, sliced
  • your favorite sub, crusty bread
  • Swiss or provolone cheese slices

Sear roast on all sides in a skillet lightly coated in oil.  Then place roast in a slow cooker with about 2 cups of beef broth, the garlic, and thyme.  Cook roast on high for about 4 hours or until it is pull-apart tender.  Remove roast from slow cooker.  Shred the roast beef.  Place roast back in its juices and the broth in the slow cooker.  Add the remaining broth.  Add more bouillon to your liking.  You want it strong beefy flavored for the sandwich.  Add pepper to taste.  Continue to cook until all is hot again.  Then saute peppers, onions, and  mushrooms in a couple tablespoons of butter until soft.  Build your sandwich–bread, meat, cheese, and sauteed vegetable mixture!  This is great for company.  You can keep the meat juicy and warm until you are ready to serve it.  You can even put the vegetable mixture in a small slow cooker to keep warm too!

Round Steak Dinner

  • 1 to 1-1/2 pounds round steak
  • 1 – 10 ounce can condensed cream of mushroom soup
  • 1 envelope of onion powdered soup mix
  • 1 cup water
  • pepper to taste

Preheat oven to 325 degrees.  Cut the round steak into desired pieces, trimming any fat. Using an oven-safe skillet, sear both sides of the meat.  Mix remaining ingredients together.  Pour over meat in skillet. Cover with oven-safe lid and place in heated oven for about 2 to 2-1/2 hours or until meat is done and tender.  Serve meat and gravy with mashed potatoes and peas!
